Limoncello Recipe

Here's the recipe we use. It makes about two 750 ML bottles. We usually have a bottle or two on hand, and it makes good gifts too!

Limoncello
  • 750 ML Vodka
  • 6 lemons
  • 1-1/2 cups sugar
  • 3 cups water
Peel lemon zest only (no pith) using a fine vegetable peeler. Place lemon peels in an airtight jar. Pour Vodka into jar, cover tightly and let stand for 10-12 days until color of liquid is deep yellow.

Pour Vodka through a strainer into a large bowl. Leave zest in strainer and place strainer over a large measuring cup or bowl with a pour spout.

Bring 3 cups of water and the sugar to a boil, stirring until sugar has dissolved, and then boil for 3 minutes, stirring occasionally. Let the syrup cool completely, then pour over zest into Vodka. Pour into bottles with tight fitting lids and refrigerate for 5 days before serving. Serve cold but do not freeze.

Out. We keep the jar in a cupboard, out of the light. Don't know if it is necessary to keep it that way, but definitely not in the fridge till it is all done and ready to drink.
