100% New Years.
Aside from that, according to II, highest demand weeks are Easter and mid-June.

I feel spring break is also a high demand week.

The better question is what are the busiest days in Vegas. Hardly anyone spends a whole week in Vegas; it is much more a place you go for events vs. a week's vacation. For example, the days leading up to and after NYE are not that busy in the city.

Not sure if the OP was asking to determine a week to get to possibly rent out, but renting out a week in Vegas is usually a losing proposition.

NASCAR - I've seen all 3 lanes of I-15 jammed for miles with cars trying to get to a race.

And don't forget to consider the convention schedule.

From a "how busy is it in the kitchen" perspective:

1) Mother's Day (by far)
2) National Rodeo Finals
3) SEMA
4) World of Concrete
5) CES
6) Pennzoil/Jiffy Lube/Bob's Bait Shack 400

New Year's is actually a fairly easy night. Not an easy night for bartenders, though.

Who asked what is the busiest day in Vegas for restaurants' kitchens?
