New Bern, NC - suggestions?

Funny that we've never yet actually been to New Bern since our first Wyndham points contract (purchased in the 1990's) is from there :p but we've always used the points for other destinations. Now DH and I (active, in our early 50's) are planning a week there, as a couple, in May. Here are some of our plans:

Sailing - by the day or by the hour - which rental company?

Tryon Palace tour - we've enjoyed St Augustine FL, Williamsburg VA, Old Salem NC, Mount Vernon VA - along these lines, other ideas?

Long day visit to Ocracoke on the OBX - is this doable?

Bicycle rentals - not sure if bringing ours because they're heavier mountain bikes, valuable - which rental company?

Other ideas for the New Bern area? :hi:

We like walking, biking, all kinds of boating, nature parks, exploring beautiful places and interesting, well-managed, historical sites. Golf and expensive restaurants are only occasionally part of our vacations, as we prefer to spend more on sightseeing and sailing. Thanks in advance.
