I have not been there with resorts - but 3 times have stayed at Palace Resorts.
Moon and Aventura - absolutely wonderful
plenty of choices of restaurants/pools/activities....

I believe where there are two beds in a room, both beds are doubles. Guess it depends on the kids whether a double is shareable. As a child, I shared a double with my sister for a number of years, and, for the most part it was fine.
