If I convert points to EEE, can I then just book a week on the II website and it will automatically take points from the EEE points stash on the Hyatt website?

Yes. You can do it that way.

Hyatt has reps at II. They are very helpful with these types of questions.

The highest demand weeks are usually pending requests. I was able to exchange with pending into:

Royal Sands - Week 50
Westin Lagunamar Cancun - Week 51
Marriott Desert Springs Villas II - Christmas
Madison Blue / Golden Sands Malta
Harbor Ridge - Maine Coast

All of these were pending requests.
